Garlic & Blue Cheese Green Bean Almondine – I Just Couldn’t Do It

When I went to culinary school in the early Eighties, the chef instructors used “Green Beans Almondine” as a prime example for the kind of stodgy, clichéd, faux-fancy, vegetable side dishes that we were supposed to eradicate shortly after graduation. 

This was the dawn of a new age of American cookery, and something so old-fashioned as green beans almondine had no place along side our newfangled raspberry vinaigrettes and cajun fish.

There was only one problem with this prohibition...green beans and almonds tasted really good together, and made for a lovely side dish once in a while. Of course, fearing you’d be laughed out of the young, hot cooks club (hot from heat, not from hotness) you just didn’t dare make or serve such a dinosaur.

Anyway, to make a long story short, I’ve finally done a green beans almondine video, but added roasted garlic and blue cheese to it, just in case any of my old classmates are watching.  I actually did this at Thanksgiving, sans nuts, and it got rave reviews, so I had a feeling the addition of the slivered almonds would work just fine, and they did! Ingredients for 4-6 portions:
1 pound green beans, blanched in boiling, salted water until almost tender
3 heads garlic
olive oil
salt and pepper to taste
cayenne to taste
1/3 cup sliced almonds browned in 1 tsp butter
2 oz Pt. Reyes blue cheese, or other blue cheese
400 degrees F. for 15 minutes

Sweet Corn & Wild Mushroom Spoonbread – Best Cornbread Dressing I’ve Ever Accidentally Made!

It’s always nice when you start out making one thing, and it unexpectedly turns into something else, which ends up being far better than you expected. Such was the case with this quite homely, yet amazingly delicious sweet corn and wild mushroom spoonbread.

I was trying to do a simple, wild mushroom-studded, sweet corn casserole to reinforce our holiday side dish repertoire, and before I knew it, I was eating the best, most flavorful cornbread dressing I’d ever tasted. Not only that, but we completely eliminated the step of having to make corn bread first!

Of course, I wish I could do stuff like this on purpose, but like my golf buddies used to say, “better lucky, than good.” The only drawback, as I obsessed over in the video, was the less that stellar appearance when it came out of the oven. 

I may try some type of gratin topping next time, but honestly, this was so wonderful tasting that I can’t even pretend to be upset over such superficial concerns.  I hope you give it a try soon. Enjoy!


Ingredients for 12 portions:
1/2 cup dried porcini mushroom pieces, softened in 1 cup hot tap water, squeezed dry
1 stick (1/2 cup) unsalted butter
3/4 cup all-purpose flour
3/4 cup yellow cornmeal
1/4 cup sugar
1 teaspoon fine salt
1/2 teaspoon baking soda
1/4 tsp freshly ground black pepper
cayenne to taste
2 large eggs
1 cup buttermilk
1/4 cup milk
1 pound sweet corn, drained well
1/4 cup chopped green onions
oil to grease baking dish
Bake at 350 degrees F. for 30-35 min

Old-Fashioned Cracker Dressing & Stuffing – Do You Dare?

Here we go again, delving into the treacherous topic of changing up your traditional Thanksgiving side dishes. This time, it’s an old-fashioned cracker dressing vying to be that surprise, uninvited guest.

Sure some you alternative lifestylists may go for the cornbread, but generally, bread-based variations rule the day. There’s a great reason for this; they’re easy, delicious, and most importantly, very familiar. Therein lies the problem.

Why mess with past success? Your loved ones wait all year for your Thanksgiving feast, so why take the chance of disappointing them on the big day? You have the entire rest of the year to do that.

Anyway, I’m not going to try and convince you that this is a superior dressing, or that you should change your regular routine, but if you’re someone who's looking for a change of pace dressing, that’s still very familiar and comforting, this could be the one.

Of course, you can use whatever ingredients you normally add to your bread dressing, and it should work just the same. By the way, I never stuff my turkey, so if you choose to use this as a stuffing, please refer to the roughly one million Thanksgiving turkey cooking guides linked online. Enjoy!


Ingredients for 16 portions:
1 pound saltine crackers (4 sleeves)
1/2 cup butter
1 large or 2 small yellow onions, diced
3 or 4 ribs of celery, diced
1 tsp salt, or to taste
1/2 tsp freshly ground black pepper
cayenne to taste
1/2 tsp dried sage
1/2 tsp dried thyme
1/2 tsp dried rosemary
2 3/4 cups chicken or turkey broth
1/2 cup cream or milk
1 or 2 eggs
*Tip: you can cook a small nugget in a pan and taste for seasoning
Bake at 375 degrees F. for bout 45 minutes

Brussels Sprouts with Warm Bacon Dressing and the Holiday Side Dish Dilemma

As I enjoyed this very tasty Brussels sprouts with warm bacon dressing recipe, I was reminded Thanksgiving side dish decision time is rapidly approaching. It’s that annual dilemma where we’re forced to choose five or six recipes among hundreds of potentially awesome options.

What makes this decision so tough is that you want things that are traditional and comforting, but at the same time, want to keep the menu fresh and interesting. You love those buttery mashed potatoes, and yet you’ve wanted to make twice-baked potatoes for years. You always make Grandma’s chestnut stuffing, but that spicy cornbread version you saw on Pinterest sure looks amazing. What do you do?

Do what I do; keep the starchy cornerstones classic, and switch up the vegetable sides instead. Go ahead and do your favorite and familiar potato, stuffing, and gravy recipe; but when it comes to tired old dishes like green bean casserole, or peas and carrots, let your freak flag fly.

As long as you have a few comfort food favorites around, people will forgive a little experimentation, and this creative, un-cooked Brussels sprouts recipe would fit the bill. I love the contrast between the raw, crunchy vegetable and the rich, smoky, sweet and sour dressing. This would do any turkey proud.

While I decided to go raw this time, you can certainly turn this into a hot side by giving it a quick, stir-fry in a large skillet. Just a minute or two, until it starts to wilt, and you’re good to go. Anyway, I’m not sure if I made your side dish selection simpler or more complicated by showing you this new and exciting offering, but I’m sure you’ll figure it out. You always do. Enjoy!


Ingredients for 4-6 servings:
1 1/4 pound Brussels sprouts (will make about 1 lb. trimmed and sliced)
1 tbsp vegetable oil
4 oz bacon, sliced
2 tbsp brown sugar
1/3 cup cider vinegar
1 lemon juiced
salt and pepper to taste
pinch of cayenne

Pickled Ginger & Asian Pear Coleslaw – "Holiday Slaw" 2012 Edition

I’m not sure when this relatively new tradition started, but for whatever reason, I like to come up with a new and interesting coleslaw to serve at Thanksgiving. With all the rich, heavy foods that the holiday table brings, I really enjoy the contrast these cold, crisp, bracing salads provide.

I’ve been doing this for five or so years now, and this may be my favorite version. Just adding the always interesting Asian pear to a standard coleslaw would’ve been a nice enough touch, but what made this so special was the subtle heat from the pickled ginger.

I can just imagine how great that piquant punch is going to work with roasted turkey, and while I still have weeks to wait for official verification, I’m pretty confident. I’m also confident you’ll be able to find some pickled ginger, especially if you have any sushi bars near you.

By the way, this is not one of those “make the day before” coleslaws. You want everything fresh and crisp, and if you leave it overnight, not only will it get soggy, but it will be way over-marinated. You can make the dressing beforehand, as well as slice up the ginger and cabbage, but wait until an hour before the dinner to cut the pear and toss everything together.

Anyway, if you’ve never considered a coleslaw for one of your holiday side dish selections, I hope this unusual, but very delicious variation inspires you to give it a try. Enjoy!


Ingredients for 6 servings:
1/2 small green cabbage, thinly sliced
1 large Asian pear, thinly sliced
1/3 cup finely sliced pickled ginger
1/4 cup sliced green onions
1 tsp toasted sesame seeds
For the dressing:
1/2 cup mayonnaise
1/3 cup seasoned rice vinegar
1/2 to 1 tsp yellow miso paste, or to taste
hot sauce to taste (I used sriracha)
*Best if tossed together no more than an hour or two before service.

Zucchini and Ricotta Casserole – Help Us End SZF in Our Lifetime

Recent made-up studies have shown that every Fall, millions of Americans suffer from a condition known as Severe Zucchini Fatigue (SZF). 

After months of eating zucchini, their bodies begin to shut down and they simply can’t stomach any more of the ubiquitous summer squash. Well, relief is now just a casserole dish away.

Thanks to the magic of mint, the goodness of garlic, and a generous topping of baked ricotta, your SZF can not only be controlled, it can be cured. For this to be fully effective, be sure to not cheat on the hot oven. 

I know your oven smokes a little bit when set to 450 degrees F. (mostly because you only clean it like once a decade), but that’s the temperature needed to brown the edges of the zucchini and cheese, before the liquids begin to leak out.

This is meant to be a relatively quick and easy vegetable side, but as I ate it I couldn’t help but think what a great one-dish meal this would have made with the addition of some spicy sausages. Maybe scatter a few slices of chorizo or lamb Merguez sausage in there? How is that not going to be great? Anyway, I hope you give this delicious zucchini and ricotta casserole a try soon. Enjoy!


Ingredients:
3 or 4 firm large zucchini
2 or 3 tbsp olive oil
4 cloves crushed garlic
salt to taste
1/4 tsp smoked paprika

Israeli Couscous & Cheese – It Takes a Lot of Balls to Make this Recipe

I’ve always been fascinated with Israeli couscous, also known as pearl couscous, and have received several food wishes recently for a recipe showing it off. I’ve had it most often in cold salads, but for whatever reason I decided to turn it into a hot side dish.

Since it’s nothing more than tiny balls of lightly toasted pasta dough, I thought it would work well in some type of macaroni-n-cheese application. I decided to skip the traditional béchamel and instead use more of a risotto technique. Short story short, it worked great!

I’ve always been a fan of the southern delicacy “pimento cheese,” so I decided to hedge my bets and toss in some of the bittersweet jewels. All in all, I really liked the dish, and how well it held up. The shot you see at the end, when I dig the fork in for a taste, was actually filmed three days after this was made, and had been reheated in the microwave. Despite sitting in the fridge, and the less then gentle reheating, it was still creamy and delicious.

By the way, the chives may seem like a simple, optional garnish, but they’re not. Put them in. They really finished this recipe off right, adding a fresh counterpoint to the semi-rich mixture. I hope you give this “ballsy” recipe a try soon. Enjoy!


Ingredients for 4 small, side dish sized servings:
2 tsp melted butter
1 cup Israeli couscous
2 cups chicken broth
1/2 cup heavy cream
1/4 cup diced pimentos

Perfectly Puffy Popovers – What Do These Have in Common with Most Chefs?

They’re crusty outside and full of hot air inside. After posting that picture of the perfect popover I had in Chicago, a reader by the name of Elizzaruth left a comment to share her recipe, which she described as “stupid easy and adaptable.” She had me at stupid.

Since it'd been like 15 years since I’d made them, I figured I give her formula a try, and then adapt it as needed. Turns out it didn’t need any adapting. It worked as advertised, and really was ridiculously simple.

I imagine the only major variable would be your oven. If it doesn’t have an accurate thermostat, or takes an extra long time to come up to temperature, then you could have issues, but other than that, not much can go wrong.

One important note: As soon as this went live on YouTube, the Brits were out in force, insisting it was nothing more than a renamed Yorkshire pudding. Well, far be it from me to educate them on their own cuisine, but unless it's cooked in greasy meat drippings, it's not Yorkshire pudding! It's okay. They get confused with recipes that aren't boiled.

Ingredients for 8-10 Popovers:
1 cup all-purpose flour
1/2 tsp salt
2 large eggs
1 cup milk
pinch cayenne
2 tbsp shredded cheddar cheese, optional
*Fill generously greased muffin tins 3/4 with batter. Put in a cold oven, set to 450 and bake 30 minutes exactly.

Bacon & Cranberry Bean Ragout and Public Apology to Mr. Bean

During this video, which features a rustic and deeply satisfying bacon and cranberry bean ragout, I make a joke about the great British actor Rowan Atkinson’s appearance at the Olympics. Based on all the thoughtful, politely worded comments I’m getting on YouTube, apparently I’m the only one in the world who’s not a huge Mr. Bean fan.

Based on the response, I’m clearly missing something. While I find Mr. Bean more creepy than comedic, I’ve been told to ignore the movies he did for American theaters (…”Ha! It’s funny ‘cause he fell down!”), and instead check out some of his brilliant work on British television. Well, that’s not going to happen anytime soon. I still haven’t finished catching up on all the Benny Hills.  

Anyway, as usual, I’ll assume I’m wrong and Mr. Bean really is comedy gold. My sincerest apologies to Mr. Rowan Atkinson – not so much for my harmless one-liner, but for him possibly finding out about the slight, and having to read this lame excuse for a pork and beans post.

Oh yeah, the bacon and cranberry bean ragout! It was super tasty, and as I stated in the clip, would make a stellar side dish to pretty much anything coming off your late summer grill. I hope you give it a try soon. Enjoy!

1/4 cup minced shallots
4 or 5 slices of bacon
1 tsp olive oil

Pork-Fried Quinoa – Oh Say Can You Seed?

Finally, after only five or six hundred requests, we’re posting a quinoa recipe! People love eating this “super food” for all the obvious nutritional reasons, but based on the emails I’ve received, they’re constantly searching for new and delicious ways to use it.

Well, this was so tasty, so fast, and so easy, I’ll be shocked if it doesn’t make it into the regular rotation. And don’t think for a minute that we’ve simply overwhelmed the quinoa with a bunch of high-calorie, unhealthy ingredients, because that’s not the case. Not that I’m above such culinary shenanigans; but it just wasn’t necessary.

I was really surprised how decadent and satisfying this seemed, and with only a tablespoon of vegetable oil, and a handful of very lean smoked ham. These tiny quinoa seeds (that’s right, now you can sound like a d-bag correcting your foodie friends at cocktail parties who call this a “grain”) really are sponges for flavor. I can’t believe I’m saying this, but I can’t wait to experiment with other quinoa creations.

By the way, if you’re an experienced quinoa cooker, and have any great tips, please pass them along. I’m not sure how this would work with the other varieties/colors of quinoa. I assume it would, but have never used them. I also used less water than the directions call for, but wanted the seeds to be a little “al dente,” which seemed to work well here.

Ingredients for 2 large or 4 small servings:
1 cup quinoa
salt to taste
1 1/2 cups cold water
1 tbsp vegetable oil
1 cup diced smoked ham
1/2 cup diced peppers

1 tbsp seasoned rice vinegar
1 or 2 tbsp soy sauce, or to taste
Sriracha, or any hot sauce to taste
toasted sesame seeds to taste

When my friend Tamar, from the always entertaining blog Starving Off the Land, heard I was doing a quinoa post, she sent me this photo. At first glace, this looks like some new variety of grey quinoa, but they're actually tiny oysters! Tamar farms oysters on Cape Cod, and you're looking at roughly 50,000 baby bivalves. Classic Rice Pilaf and Little White Lies

You’re a great cook. You know it, and so do all your friends. There are no techniques or recipes you haven’t mastered, well, except for one… you stink at making rice. Sure, when it comes up in conversation you lie and say your rice rocks, and offer advice to your unsuspecting friends, but we know the truth.

It’s okay. You’re not alone. Cooking a perfect batch of white rice without a rice cooker can be a challenge. I attempted to solve this issue in 2007, when I posted “How To Make Perfect White Rice,” but if for whatever reasons you still can’t do it, no problem! We’re simply going to have you do what so many great minds over the centuries have done in these situations…give up.

That’s right, we going for forget about cooking rice on the stove, and show you the incredibly delicious and absolutely foolproof world of pilaf! Because it’s coated with butter first, and baked with less liquid, this almost magical recipe will give you magazine quality rice every time (and I’m talking about the good food magazines, not those ones that went out of business).

I’m showing a fairly classic version here, which includes the extremely optional ingredient, saffron. If you are not familiar with this exotic spice, follow this wiki-link to get more info, as the subtle taste is very hard for me to describe. By the way, it’s crazy expensive and you’ll only want a tiny pinch, for too much will dominate the palette.

You also want a high-quality, non-discount brand of rice. Cheap rice has lots of broken grains, which do not cook evenly. So, if there’s shame in your rice game, I hope you give this great rice pilaf recipe a try soon. Enjoy!


Ingredients for about 6 servings:
2 tbsp butter
2 tbsp olive oil
1/2 yellow onion, finely diced
2 cups white long grain rice
pinch of saffron, optional
3 cups good quality chicken stock or broth (or water if you must)
1 1/2 tsp salt, or to taste
pinch of cayenne  
*wrap very tightly in foil, bake at 350 for 35 minutes, let rest 10 more, and then fluff!

Fast & Easy Creamed Spinach – Cash Rules Everything Around Me (C.R.E.A.M.)

When people ask me if I fear eventually running out of things to video, I say no, and then joke that even if I did, I’d just start filming them all over again to keep that sweet ad revenue flowing in.

While that wasn’t the reason, I did think about that while filming this new and possibly improved creamed spinach recipe. As I’ve admitted before, every once in a while I’ll film something because I feel like eating it, and not because it’s a food wish. This lovely side dish is one such recipe.

I was driving over the Bay Bridge a few weeks ago, and C.R.E.A.M. by the Wu-Tang Clan was on the stereo. As Raekwon the Chef and Method Man serenaded me over the foggy span, I started to crave a steak and side of creamed spinach. This happens more than I care to admit, where a song triggers a yearning for some sort of tasty bite. Please tell me this happens to you too.

This more contemporary creamed spinach recipe is very similar flavor-wise to our previously posted “Steakhouse Creamed Spinach,” but since it doesn’t use a béchamel, it’s a bit lighter in texture. You'll need to use a nice heavy cream, since it thickens beautifully as it reduces, leaving you with a simple, but still luxurious sauce.

The only way to ruin this dish is to not squeeze all the water out of the cooked spinach. If that’s covered, the rest is pretty simple. Keep in mind that even perfect squeezed spinach will still thin out the sauce a bit; so don’t be afraid to reduce the cream until quite thick. You can always add another drizzle of cream if you go too far.

Anyway, as the WTC would say, I hope you’re trying to hear what I'm kickin' in your ear. This would make a great side dish for your next steak dinner, and you should give it a try soon. Enjoy!

2 pounds cleaned spinach
2 tsp olive oil
For the cream sauce:
1 tbsp butter
2 tbsp minced shallots
pinch of salt, cayenne, freshly ground black pepper to taste
pinch of fresh grated nutmeg
1 tsp freshly grated lemon zest
3/4 cup cream
2 tbsp finely grated Parmigiano-Reggiano cheese

Classic Roasted Red Potatoes – Overlooked and Essential

This roasted red potatoes recipe is one of those food wishes that seems so basic I tend to pass it over for the more provocative requests. I’m sure this has been asked for dozens of times, and yet 725 videos in, I still hadn't posted this iconic side dish. Well, that madness ends today.

While I may take this procedure for granted, it really is a technique that should be mastered by all home cooks. There are three key elements necessary to achieve roasted red potato nirvana. You need a heavy, shallow roasting pan or baking dish, lots of olive oil, and the most precious ingredient of all…time.

I use a Le Creuset, which is glazed cast iron, but any heavy-duty pan should work. No need for expensive extra virgin olive oil for this; just choose whatever you’d use to sauté onions and peppers for Italian sausage, which, coincidentally, would pair awesomely with roasted red potatoes. As for the relatively long cooking time, we make no apologies.

These are technically overcooked, but that’s what it takes to get that perfect marriage of crispy-crusty outside and creamy-soft inside. The only real way to lose at this is to undercook the potatoes. This is considered a crime against nature, and will not be tolerated.

I served mine next to some grilled bass, which was topped with a very garlicky sauce, so I didn’t add any to my potatoes. If you do want some garlic flavor, add some crushed cloves to hot olive oil, and let it sit for an hour. Then strain and use olive oil as shown.

Anyway, I'm sorry I didn’t post this great recipe sooner, and I’ll be sure to pay more attention to these types of requests. This is the kind of beautifully humble dish that makes any meal better, and is more than worth learning to make well. I hope you give it a try soon. Enjoy!


Ingredients for 6 portions Roasted Red Potatoes:
2 pounds red potatoes, cut in evenly-sized pieces
salt, pepper, cayenne to taste
thyme sprigs, add whole and remove barren twigs after cooked
1/4 to 1/3 cup olive oil
1/2 large red bell pepper, seeded, cut in chunks

How NOT to Roast Stuffed Artichokes

Everyone knows that before you stuff and roast an artichoke, you have to boil it first. I know this, and have used this accepted technique many times.  

However, somewhere deep in the memory banks were vague recollections of a stuffed artichoke appetizer that the chef claimed had been roasted raw. This video shows what happens when a cook’s heart ignores a cook’s brain.

The finished product was visually arresting (to put it kindly), and despite looking completely inedible had quite a nice taste and texture. No, that wasn’t the problem. It was the almost 2 1/2 hours (seemed longer) I spent making it that took the wind out of my sails. I love stuffed artichokes, but not that much.

So, I’m recommending we boil our trimmed artichokes in salted water for 30 minutes, or until they just start to get tender. Then, drain very well, stuff with the crumbs and roast until tender and crispy-brown. You’ll have the same amazing artichoke appetizer without the Monopoly-tournament time commitment. Enjoy!


For each artichoke:
1/4 cup bread crumbs
2 tbsp finely grated Parmigiano-Reggiano
salt and pepper to taste
cayenne to taste
pinch of dry or fresh herbs
2 tbsp olive oil
juice of 1/2 lemon
1 clove minced garlic
*boil for about 30 minutes in salted water, drain very well, stuff and roast at 375 F. until tender and browned.

Black Onion Relish – I’ve Never Wanted a Hot Dog So Badly in My Life!

This quick and very dirty recipe for black onion relish was quite delicious on grilled salmon, but with every bite I became more and more agitated, thinking about how utterly perfect this would have been on a grilled hot dog.

If you’re one of these enlightened souls that enjoy grilled onions on their ballpark franks, you will love this sweet and smoky condiment. 

There’s something about how the onion roasts in its own charred skin, buried in the white-hot coals, which brings a goodness not achievable in a pan. Believe me when I say, my next hot hog WILL be wearing this relish.

As usual, I played it straight with the seasonings, but if I had a dollar for every way you could adapt this relish recipe, I’d have enough money to pay someone to think of a real ending for this post. Enjoy!


Ingredients for about 1 1/2 cups:
2 yellow onions
1 red pepper
chopped parsley, to taste
cayenne, salt and pepper to taste
*Dress with oil and vinegar to taste - I used about 3 tbsp olive oil and 3 tbsp vinegar

Potato and Mustard Greens Salad – I Invented This Recipe Right After I Stole It

I was enjoying some barbecued beef brisket recently, and as I went to stick my fork into the potato salad that accompanied it, I could see something looked very different. The salad was chock full of what appeared to be some kind of chopped, dark, leafy greens.

I took a bite, and quickly realized it was mustard greens. What a great idea! The greens not only added an interesting heat, but provided texture as well. I made up my mind right then and there that I’d borrow this idea, and share it before Memorial Day weekend.

On my way out I thanked the counter person for the great lunch, and said how much I loved the mustard greens in the salad. He smiled and said thanks, but that they were actually dandelion greens. I mumbled something like “that’s what I meant” as I realized I’d been fooled by the prepared mustard and hot spices that dressed the similarly flavored green.

Anyway, I decided to stick to my original plan and use the easier to find mustard greens, and I was very happy with the results. As you’ll see, I went extremely simple in the ingredient list, but obviously you can dress this up with lots of additions.

By the way, this is no beginner’s potato salad. Mustard greens are spicy, slightly bitter, and not at all subtle, but when you consider the sleepy array of potato salads at your typical Memorial Day cookout, this original and very tasty alternative would certainly be a welcomed treat. Enjoy!


Ingredients for 6-8 Portions:
2 1/2 pounds Yukon Gold potatoes
4 cloves garlic (boiled with potatoes)
1 cup chopped mustard greens, or to taste
1/2 cup chopped dill or sweet pickle
salt and pepper to taste

For the dressing:
*this is what I used, do yours to taste!
1/2 cup mayo
1/3 cup white wine vinegar
1/4 cup olive oil
1 tsp Sambal chili sauce
salt and pepper to taste

Braised Red Cabbage – That is All

No matter how basic or boring an ingredient or dish is, I can usually come up with something to pontificate on, but for this lovely braised red cabbage recipe, I’ve got absolutely nothing.

I could go on about how I’m not sure what that color red is called, but I did that in the video. I could joke about taking one for the team, and keeping this side dish purely vegetarian for a change, but there’s nothing funny about not adding bacon.

I could suggest a few easy ways to turn this into an amazing one-dish meal, by adding some smoked sausage or leftover pork ribs, but that’s probably so obvious that I’d be insulting your intelligence.

Or, I could have gone into a great, old prep cook anecdote about how I won $10 from a pastry chef in 1987 by juggling red cabbages on the hotline during service, but that would have meant making up the story, since it was actually cantaloupes.

No, I’m not going to mention any of that. I'll simply suggest that if you want an easy, gorgeous looking, and very tasty vegetable side dish, then you should give this a try soon. Enjoy!


Ingredients for 4-6 portions:
2 tbsp butter
1 small Red cabbage, sliced thin, about a 1 1/4 pounds
1/3 cup water
1/4 cup red wine
2 tbsp red wine vinegar, or to taste
2 tbsp white sugar
pinch of caraway seeds
salt and pepper to taste
*Note: there are SO many ways to tweak this recipe! Raisins, currants, shallots, onions, leeks, apples, and pears are just a few things that rock in this recipe.

Cottage Fries – America’s Forgotten Fry and Most Delicious Roofing

While they don’t get the same love as French fries, home fries, or steak fries, cottage fries more than hold their own against their potato side dish fraternity bothers. 

And, unlike their French cousins, these easy cottage fries actually crisp up quite nicely in the oven, and as I described in the video, resemble fat, succulent potato chips. I don’t know about you, but to me there’s nothing about “fat, succulent potato chip” that doesn’t sound good.

They’re called cottage fries because they supposedly look like the shingled roofs on those cute little houses you see in the movies and on travel brochures. Appearances aside, I find serving and eating something associated with “cottages” to be just a little more relaxing and civilized than other less vacation-y potatoes.

I used Yukon gold potatoes, which as you’ll see, worked fine, but I do prefer the slightly starchier russet. I would avoid any of the red varieties, as they have a much waxier texture, and don’t get as crusty as other types.

I also used a silicon mat to cook mine on, but you’ll get even crispier edges if you use foil, or put the sliced potato directly on a non-stick baking sheet. Of course, the seasoning options are only limited by your imagination and self-control.

I love Herbes de Provence in this, but literally any fresh or dried herb will work here. Keep in mind, these chips are great just seasoned with olive oil, salt, and pepper, so you’re cooking from a position of power – don’t try and do too much. enough olive oil to coat

Broken Spaghetti “Risotto” – There’s a Good Reason for Those Quotation Marks

This broken spaghetti “risotto” is many things – a fun-to-make recipe; a visually unique pasta dish; and a great alternative to the same old starchy side dishes – but one thing it’s not, is a risotto. No rice was harmed in the making of this video.

The “risotto” refers to the similar technique used for that famous Italian dish. Like the grains of Arborio rice, the pieces of broken pasta are tossed in hot butter or oil before the liquid is added, but here we’re going even further, and toasting it to a gorgeous nut-brown.

This gives the dish its signature look, as well as adds a subtle nutty/toasty flavor. The rest of the process is similar to risotto as well, with the broth being added in increments, to be absorbed by the noodles before the next splash is added.

The broth amounts below should be very close to what you’ll need, but as I said in the video, depending on the pan, heat, and size of batch, you’ll have to simply adjust on the fly.

As long as you don’t walk away, you should be fine. Just keep stirring until the liquid is almost gone, then taste, and if the pasta is cooked, you’re done. If it needs more, add a little broth and keep going.

I did this as a simple side dish, but if you added some vegetables and shredded chicken, you’d be looking at quite an impressive main course. In fact, don’t be surprised if you see this dish re-imagined here in the future. In the meantime, I hope you give this a try soon. Enjoy!

1 tbsp olive oil
1 cup cut spaghetti, or regular spaghetti broken into very small pieces
2 cloves garlic, finely minced
about 1 1/2 cups hot chicken broth or stock, as needed
salt and chili flakes to taste

2 tbsp Romano or Parmigiano-Reggiano cheese, or to taste
