Sausage Ribs – Deliver A Bone-Jarring Hit to Your Football Food Lineup

Chips and dips may be fine for regular season gridiron action, but when the playoffs roll around, and you need to go that extra yard to score a touchdown with your guests’ taste buds, these Italian sausage-spiced baby back ribs are a proven big game performer. 

If only I could’ve somehow added a few more forced football references into that intro.

Sweet and succulent pork ribs are never a bad addition to the game day buffet, but they can get predictable with the same old rubs and sauces. Here we have all the baby back rib-y goodness you know and love, but with the flavor profile of sweet Italian fennel sausage.

I know a lot of you wrap your ribs in foil for the initial slow/low cooking phase, as do I, but here we’re doing them uncovered to help achieve a slightly chewier, more toothsome texture. These are still quite tender and juicy, but just not too soft, and falling off the bone.

These really did have a wonderful flavor, which was further highlighted by the spicy, sweet, and tangy orange glaze. My only regret was that I didn’t have any hotdog buns around, as I would have pulled out the bones, and served these just like a real sausage sandwich. There’s always a next time.

Anyway, I enjoyed all that rich and fancy holiday feasting as much as anyone, but now all I’m craving is a couch, a cold beer, and a simple plate of ribs…that tastes like sausage. I hope you give these a try soon. Enjoy!


Ingredients for 2 racks of baby back ribs:
2 trimmed racks of baby back pork ribs
For the rub:
1 tbsp fennel seed, crushed fine
1 tbsp freshly ground black pepper
1 tbsp garlic salt
1 tbsp sugar
1 tbsp kosher salt
1/2 tsp cayenne or to taste
For the glaze (simmer until reduced by half):
1/3 cup brown sugar
1/3 cup orange juice
1/3 cup rice wine vinegar
2 tsp hot chili sauce or to taste
1 tbsp orange zest

- Bake ribs at 275 degrees F. for 2 1/2 to 3 hours or until fork tender.
- Cut, coat with glaze, and finish in a hot 425 degrees F. oven until caramelized.

Brazilian Feijoada – Happy (and hopefully very lucky) New Year!!

We’ve posted about this before, but there’s a great, southern tradition of eating beans and greens on New Year’s Day to ensure good fortune in the coming year. 

Apparently, by eating “poor” the first day of the year, you align certain cosmic forces in your favor, which results in prosperity and good luck the rest of the year. Sounds crazy, right? I know, you’re way too sophisticated to believe in such lame supernatural shenanigans. Hey wait a minute…don’t you watch all those ghost hunter shows on cable TV? Busted! Hey, did you hear that noise?

Anyway, whether you believe in this kind of culinary clairvoyance or not, this Brazilian feijoada is one of the world’s great stews. The traditional good luck bean is the black-eyed pea, but here we’re celebrating the delicious, and very nutritious, black bean.

I tried to be clear in the video that this is just my version, and not some attempt at true feijoada authenticity, whatever that is. As long as you have black beans, and LOTS of smoked, salted, dried, and/or cured meats, you are well on your way to some kind of feijoada-like awesomeness.

In case you’re wondering, all I did for the greens was boil some kale in salted water until tender, and then sauté briefly in olive oil and garlic. It pairs perfectly with the white rice and rich stew, and while I can’t guarantee a year’s worth of wealth and good luck, I can promise you a delicious bowl of food. Ingredients for 6 portions:
1 pounds dry black beans, soaked overnight
2 quarts water, plus more as needed (add more whenever stew looks too dry)
1 bay leaf
2 smoked pork chops
12 oz linguica
8 oz Italian sausage
4 oz smoked bacon
3 oz dried beef
1 onion
6 cloves garlic
1 tsp cumin
1/2 tsp coriander
salt and pepper to taste
For the crumbs:
1/2 cup breadcrumbs
1 tbsp olive oil
2 tsp grated orange zest
2 tbsp chopped Italian parsley

Basic steps:
- Soak beans overnight, add to pot with bay leaf, beef jerky, and any bones
- Simmer for 1 1/2 to 2 hours, or until beans are cooked, but very firm
- Add onion mixture and meats, and simmer for another hour, or until beans are very soft
- Add a splash of water at any point during the cooking if stew looks too dry
- Test and add salt near the end, depending on saltiness of meat

Christmas Hamlets – To Eat or Not to Eat Will Not Be a Question

I had been fantasizing for weeks about doing a whole, home-cured ham for the holidays. I always get lots of requests for this kind of thing, and was fully prepared to give it a go, but then a strange thing happened, I heard the word “Hamlet.” 

It was on TV, and completely unrelated to cured pork, but for whatever reason the word made me think of cute little, individually sized hams. That’s all it took, and off I went trying to figure out how to make this thing happen. I knew I wanted a process that wouldn’t require the pink curing salts used in commercially produced hams, not because they are unhealthy, they’re not, but because it would be hard for some of you to find.

I’ve read things in the past about using celery’s naturally occurring nitrates to accomplish the same thing, so that’s what I used, and as you’ll hear me say several times in the video, I was thrilled with the results! While not exactly like a classic city ham, this was very close. The firm, moist texture was great, the salt level was spot on, and since we used loin instead of leg, there’s even a little less fat.

I’m afraid I won’t be able to help much with questions about how to do this with bigger or different cuts, as this was my first foray into home-cured ham, so if you are going to attempt this, please go to a good butcher to get the exact same size “chops” that I used. If you do, and follow these simple steps, I think you will have a holiday meal “to die for.” Sorry, but you didn’t expect me to do this entire post without one forced reference to the play, did you? Ingredients for 4 Hamlets:
4 thick-cut (10-12 oz) center cut, boneless pork loin “chops”
For the brine:
1/2 cup *kosher salt plus 1 tablespoon
(*if using fine table salt, you’d only need barely 1/3 cup)
3/4 cup packed brown sugar
1 tsp finely ground black pepper
1 tsp allspice
1/2 ground cloves
1 bay leaf
1 1/2 cups boiling water to dissolve salt and sugar
3 celery stalks (about 2 cups chopped)
1/2 yellow onion
3 cloves garlic
2 cups cold water to puree vegetables in blender, plus add enough cold water to make 2 quarts total volume of brine
Brine for 48 hours before roasting

For the glaze:
1/4 cup packed brown sugar
2 tbsp Dijon mustard
pinch of cayenne
whole cloves as needed

Roast at 325 degrees F. until an internal temp of 145 degrees F. is reached.

Chicken Cordon Bleu-wich – An Old Classic Gets Open Faced

If you love chicken cordon bleu because it’s “fancy,” and you serve it primarily to impress dinner guests with your culinary skills, then this video is really not for you. However, if you love chicken cordon bleu because of its winning flavor combination of chicken, ham, and Gruyere cheese, then stick around.

Don’t get me wrong, I love the classic preparation, and will do my version one of these days, but for all that pounding, stuffing, rolling, pinning, breading, frying, and baking…I can deliver the same basic flavor and texture profile with significantly less time and effort.

By the way, while most consider this a French recipe, the word on the street is that this actually originated in Switzerland. That doesn’t really have any bearing on the recipe, but since I can’t remember ever giving the Swiss a hard time here, I thought I’d take this opportunity to ask, what’s up with those pocketknives? You really need one tool that can both kill a squirrel and puck nose hairs? Seems a little much.

Anyway, it’s been a while since I posted a sandwich video, and this, as the name would indicate, was certainly a blue ribbon winner. It made for a perfect lunch, but throw a poached egg on top, and you’ve got a stellar brunch item; or cut these up into quarters, and serve as finger food for the next big game. Ingredients for 4 portions:
*Note: topping can be made days ahead and baked whenever.
2 tbsp butter
1/2 cup diced smoked ham
1/2 cup diced onion
1/4 tsp dried thyme
2 tbsp flour
1/2 cup plus 1 tbsp milk
3 oz shredded gruyere cheese, divided (save a little for the top)
1 rounded tsp Dijon mustard
pinch of nutmeg
1 cup diced cooked chicken
1/4 cup diced dill pickle
cayenne, salt and pepper to taste
2 tbsp bread crumbs mixed with 1 tsp melted butter for the top

Swedish Meatballs and the Most Under Appreciated Celebrity Chef Ever

Whenever there’s a discussion about the history of celebrity chef pop culture, one name is invariably left out, and this Swedish Meatballs recipe served as a reminder of that sad fact. How anyone can talk about the pioneers of food television without including the Swedish Chef from the Muppets is beyond me.

His frenetic energy and charisma makes Gordon Ramsey seem like a shrinking violet by comparison. His technique surpasses Emeril's on every level, and if we’re just talking catch phrases, how can you even begin to compare “Yummo” to “Bork, Bork, Bork?”

Some use the excuse that he wasn’t actually real, that he was just a bunch of stained, smelly fabric, wrapped around some dude’s hairy forearm. Well, that may be true, but it goes beyond that. I believe there’s been a systematic discrimination against Swedish chefs, which has made advancing upward impossible. I call it the ice ceiling.

Anyway, in related news, these Swedish meatballs rocked! Unlike most of the recipes I post here, I’ve had little experience with the recipe, but was very happy with the results, except for one major issue, which I mention in the video. I broke the cardinal rule of meatball making, and used lean meat.

Not paying attention, I picked up a package of ground pork that turned out to be 95% lean. The horror. I might as well have used tofu. Nonetheless, I loved the flavor, but implore you to use regular ground beef, and ground pork with a 75/25 lean-to-fat ratio. Do that, and you’ll be enjoying a plate of meatballs even the world's most under appreciated celebrity chef would love. Enjoy!


Ingredients for 4 large portions:
For the meatballs:
2 tbsp butter
1/2 yellow onion, finely chopped
1/4 cup milk
2 large eggs
1/3 cup plain bread crumbs
3/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1 1/2 teaspoon fine salt
pinch of cayenne
1 pound ground chuck
1 pound ground pork
*Note: you can always cook a little piece to taste for salt, and adjust from there.
Brown meatballs in 425 degrees F. oven for about 20-25 minutes.

For the sauce:
2 tbsp butter
3 tbsp  all-purpose flour
3 1/4 cups beef broth
1/2 cup heavy cream
1/2 tsp sugar
1/4 tsp Worcestershire sauce
salt and pepper to taste

Brussels Sprouts with Warm Bacon Dressing and the Holiday Side Dish Dilemma

As I enjoyed this very tasty Brussels sprouts with warm bacon dressing recipe, I was reminded Thanksgiving side dish decision time is rapidly approaching. It’s that annual dilemma where we’re forced to choose five or six recipes among hundreds of potentially awesome options.

What makes this decision so tough is that you want things that are traditional and comforting, but at the same time, want to keep the menu fresh and interesting. You love those buttery mashed potatoes, and yet you’ve wanted to make twice-baked potatoes for years. You always make Grandma’s chestnut stuffing, but that spicy cornbread version you saw on Pinterest sure looks amazing. What do you do?

Do what I do; keep the starchy cornerstones classic, and switch up the vegetable sides instead. Go ahead and do your favorite and familiar potato, stuffing, and gravy recipe; but when it comes to tired old dishes like green bean casserole, or peas and carrots, let your freak flag fly.

As long as you have a few comfort food favorites around, people will forgive a little experimentation, and this creative, un-cooked Brussels sprouts recipe would fit the bill. I love the contrast between the raw, crunchy vegetable and the rich, smoky, sweet and sour dressing. This would do any turkey proud.

While I decided to go raw this time, you can certainly turn this into a hot side by giving it a quick, stir-fry in a large skillet. Just a minute or two, until it starts to wilt, and you’re good to go. Anyway, I’m not sure if I made your side dish selection simpler or more complicated by showing you this new and exciting offering, but I’m sure you’ll figure it out. You always do. Enjoy!


Ingredients for 4-6 servings:
1 1/4 pound Brussels sprouts (will make about 1 lb. trimmed and sliced)
1 tbsp vegetable oil
4 oz bacon, sliced
2 tbsp brown sugar
1/3 cup cider vinegar
1 lemon juiced
salt and pepper to taste
pinch of cayenne

Apple Cider Glazed Pork Chops – Great Recipe, No Bones About It

This shining example of what a few well-placed ingredients can do to a plain piece of meat reminded me of a couple very important things. By the way, if you’re new to cooking, being reminded of stuff is one of the best parts.

First of all, it had me recalling the old, “if it doesn’t have a bone in it, it’s really not a chop.” Of course, search engines being what they are, we were forced to use the oxymoronic “boneless, center-cut pork chops” instead of the traffic stunting “pork medallions.” Not a big deal, but worth mentioning in case you’re ever backed into a corner during a heated, butchery-related water cooler debate.

Secondly, I remembered I need to redo that demo I did for another website many years ago, on how to cut your own boneless, center-cut pork chops, thereby saving some cash. It’s a quick and simple trick, and one I’m sure many of you will remind me I forgot about in a few weeks.

Anyway, the glossy glaze is really easy, and while there’s no starch or extra butter involved, it reduces quickly to a thick, rich, sweet-tart apple syrup. The rosemary and pepper flakes were the perfect accents for me, but this is a technique that begs for your own personal touches. Ingredients for 6 chops:
1 tbsp vegetable oil
1 tbsp butter
6 boneless center-cut pork chops (6-8 oz each)
salt and pepper to taste
3 cloves minced garlic
1/4 cup apple cider vinegar
2 cups apple cider

1 tsp minced rosemary
pinch of red chili flakes

Ham with Red Eye Gravy – Something From Nothing is Something

In this age of cutting back on fat whenever and wherever we can (and by “we” I mean “you”), we forget that throughout most of history, this was the complete opposite. Fat was a concentrated, powerful fuel that literally kept people going, and this red eye gravy is a little taste of those times.

The challenge in tough times is to make those greasy pan drippings more palatable, more interesting, and more delicious. It’s not like families struggling through the depression had pots of demiglace reducing on the stove, or bottles of Cabernet Sauvignon sitting around to deglaze their cast iron skillets – heck, they probably didn’t even have a decent Merlot. So they used what they had; like a splash of leftover coffee.

Is this a recipe that would have been developed based solely on how awesome it tastes? Probably not, but that’s not to say it isn’t still very tasty. It is. The way the bitter coffee marries with the sweet, smoky fat is far from unpleasant, and infinitely better than simply pouring the pan drippings over your food.

By the way, the name apparently comes from the fact that when the sauce is poured in a bowl and brought to the table, the fat and coffee separate, it takes on the appearance of a big, reddish eye. Of course there’s another legend about how General Andrew Jackson told a hung-over cook to make a gravy for his ham that was as red as his bloodshot eyes.

I’m pretty sure whoever made up that story also had very red eyes, but not from whiskey. Anyway, like I said in the video, I did this as more of a culinary experiment than a “you have to try this” recipe, but regardless, I think it’s an interesting dish, and one I’d be interested in hearing about if you do try. 1/2 cup of chopped fatty ham scraps
1 tbsp vegetable oil
4 thick slices of ham
1 tsp flour
about 2/3 cup black coffee
black pepper and cayenne to taste

Cheater Pierogi – This is No Polish Joke

During this video for quick and easy cheese pierogi, I joke about my Polish grandmother rolling over in her grave, but after eating several batches of these delicious dumplings, I’m pretty sure Grandma Sophie would have approved. 

I’ve always been a big fan of wonton skins. Not only have I used them for wonton soup, but also for tortellini, ravioli, and various other dumplings.  They’re very user-friendly, but use a damp paper towel to cover the open package as you work, since they can dry out quickly and become harder to work with.

Whenever I post a video like this, the most common questions usually revolve around what alternative fillings would work. Let me handle that issue right now. Anything will work as a filling. Literally. Most high-end grocery stores will have farmer’s cheese, but if you can’t find it, a mixture of half cream cheese and half ricotta would get you very close.

I decided to break with family tradition and serve these with bacon and caramelized onions, as we usually just fry in a little butter and serve with sour cream. I blame Chicago’s Pierogi Heaven for this, since it was during a recent visit that I had a plate served similarly, and it was amazing.

Anyway, whether you’re an old pro, or brand new to the joys of pierogi, I hope you give these easy, cheesy dumplings a try. Remember the old saying...if you’re not cheating, you’re not trying. Enjoy!


Ingredients for about 50-60 Pierogi:
1 1/2 cups warm mashed potato
1 1/2 cup farmer’s cheese, or any cheese blend
1 large egg
salt and pepper to taste
pinch of cayenne
50-60 wonton wrappers
sour cream and chives as needed

Bacon and Onion Sauce (enough to garnish about 12 pierogi)
4 slices bacon, sliced thin
1/2 large yellow onion, diced
2 tsp butter
*After bacon is crisp, drain excess fat, reserving about 2 tbsp to fry pierogi.

Bacon & Cranberry Bean Ragout and Public Apology to Mr. Bean

During this video, which features a rustic and deeply satisfying bacon and cranberry bean ragout, I make a joke about the great British actor Rowan Atkinson’s appearance at the Olympics. Based on all the thoughtful, politely worded comments I’m getting on YouTube, apparently I’m the only one in the world who’s not a huge Mr. Bean fan.

Based on the response, I’m clearly missing something. While I find Mr. Bean more creepy than comedic, I’ve been told to ignore the movies he did for American theaters (…”Ha! It’s funny ‘cause he fell down!”), and instead check out some of his brilliant work on British television. Well, that’s not going to happen anytime soon. I still haven’t finished catching up on all the Benny Hills.  

Anyway, as usual, I’ll assume I’m wrong and Mr. Bean really is comedy gold. My sincerest apologies to Mr. Rowan Atkinson – not so much for my harmless one-liner, but for him possibly finding out about the slight, and having to read this lame excuse for a pork and beans post.

Oh yeah, the bacon and cranberry bean ragout! It was super tasty, and as I stated in the clip, would make a stellar side dish to pretty much anything coming off your late summer grill. I hope you give it a try soon. Enjoy!

1 cup shelled cranberry beans
1/4 cup minced shallots
4 or 5 slices of bacon
1 tsp olive oil
salt and pepper to taste
4 cloves garlic, crushed
2 cups chicken broth, or as needed
2 tsp chopped rosemary
2 tsp lemon zest
2 tbsp lemon juice
cayenne to taste
2 tsp extra virgin olive oil
1 tsp hot chilies
1 tbsp fresh herb like Italian parsley, chervil, oregano, etc.

Crispy Pork Cutlets with Creamy Jalapeno Green Onion Gravy – Say Auf Wiedersehen to the 3-Pan Breading Station!

This is what happens when you have two food wishes in your head at the same time. I’ve wanted to do a schnitzel video für immer, but thanks to another recent food wish, I was also craving biscuits with cream gravy. So, I sort of did both, and it worked out well. Very well.

The crispy pork cutlet part of the presentation is very simple and straightforward, but it did afford the opportunity to share my new breading system. With all the time you’ll save, you can hit the gym to burn off this less than light, but extremely satisfying meal.

I’ve never been a big fan of the 3-pan breading system. Once you dredge meat in the prescribed dish of seasoned flour, you have to toss the rest. The whole idea is to simply coat the meat with flour, so why not just sprinkle on already seasoned meat? We use much less flour that way, and with zero waste.

From there, we’re not dipping these in a bowl of beaten eggs. Why do that, when we can just dump one egg on to the same plate and toss to coat. Faster, easier, and one egg is plenty for four cutlets.

As far as the cream gravy goes, the jalapenos and green onion probably seem logical, but some may raise an eyebrow over the diced dill pickle. I’m not sure exactly why I added them, but I just had one of those feelings. Pickles and pork, dill and cream sauce, it felt right, and it tasted even righter.

By the way, you can substitute veal, beef, turkey or chicken for the pork without missing a beat. Anyway, I hope you give this easy pork cutlet, delicious cream gravy, and/or new breading system a try soon. Enjoy!


Ingredients for 8 Cutlets (makes four entrée size portions of 2 cutlets each):

2 fully trimmed pork tenderloins, cut into 8 pieces, pounded flat
salt and pepper to taste
flour as needed
2 eggs
about 3 cups panko breadcrumbs
For the gravy:
2 tbsp melted butter
1/3 cup diced dill pickles
1 or 2 jalapeños, small dice
1 bunch green onions, chopped
salt and cayenne to taste
1 1/2 tablespoon flour
1 1/2 cup cold milk, plus more to adjust thickness if needed

Grilled Jerk Pork Tenderloin – Because We're All a Little Jerky

Whenever I make this incredibly flavorful jerk spice marinade for chicken, I think to myself, “Man, I bet this would be great on pork tenderloin. I’ll have to try that next time.” Well, a few dozen summers have come and gone, and since I still hadn’t experienced that “next time,” I decided to finally try it, and it was great!

As expected, the spicy, aromatic marinade worked wonderfully with the lean, mild pork, and as long as you heed my warnings not to overcook the meat, you and your guests will be very happy with this. Of course your guests' happiness should be the most important thing to you, but let’s face it, it’s not.

No, a stunningly successful grilled recipe like this is all about you standing next to that platter of perfectly cooked pork – beer in one hand, tongs in the other – soaking in waves of compliments and adulation. Does that make you a Jerk jerk? Yeah, a little bit. Anyway, I hope you give this very easy recipe a try. Enjoy!


Ingredients for 6 portions:
2 (1 1/2-pound) pork tenderloins, trimmed, cut in 3 pieces each
1/2 bunch fresh thyme, about 1/3 cup picked leaves
1/2 chopped onion
1 to 4 Scotch Bonnet or Habanero peppers, seeded
4 garlic cloves
2 tbsp minced fresh ginger
1/4 cup white vinegar
2-3 tablespoons soy sauce
2 tablespoon vegetable oil
1 tbsp brown sugar
1 tsp fine salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne
1/4 teaspoon ground nutmeg
2 teaspoon ground allspice
1/4 teaspoon ground cinnamon
*cook until at least 145 F. internal temp

This Asparagus, Ham, and Ricotta Pizza Has a Really Nice Personality

That’s what I’d say about this delicious asparagus, ham, and ricotta pizza if I were trying to fix it up on a blind date. Every once in a while I get a craving for a non-tomato sauce, or “white” pizza, and when I do, I’m forced to choose between béchamel and an olive oil base.

I love both styles, but was in the mood for something different, so I decided to use some ricotta and olive oil to make a spread, which I topped with smoked ham, asparagus, white cheddar, and Parmigiano-Reggiano. It tasted great, but I found its appearance to be somewhat unsightly.

I knew the ricotta and olive oil would separate somewhat in the extra hot oven, but I thought with the other cheeses on top, it wouldn’t be noticeable, but as you can see, it was. The good news is, no one seems to mind, and it did taste great. By the way, you can certainly do a less rich, lower cal version by just using seasoned ricotta without the oil.

Anyway, “new pizza ideas” is always a popular food wish, and I hope this ricotta spread inspires lots of pizza experimentation in your kitchen. If you need a pizza dough recipe, I used this great no-knead version, but if you prefer something faster, this Wolfgang Puck-inspired recipe is also a winner. Enjoy!


Ingredients:
For the spread:
1/2 cup ricotta
1/4 cup olive oil
2 tbsp cream or milk
2 cloves minced garlic
salt and pepper to taste
red pepper flakes
fresh herbs if so desired
pizza dough for one medium pizza
1 cup asparagus pieces
1/2 cup diced smoked ham
1/2 cup shredded white cheddar
1 tbsp grated Parmigiano-Reggiano as needed

Mustards Grill’s Mongolian Pork Chop – Video No. 700 Was All Me

Every once in a while, I post a recipe that I’ve received exactly zero requests for, and this gorgeous Mongolian pork chop is the most recent example – sort of ironic, considering this is video 700, and I’m celebrating the milestone by going rogue! 

While 95% of the videos you see are inspired by actual “food wishes,” sometimes I’ll remember something so delicious, I just have to add it to the library.

One of my favorite restaurants anywhere is Mustards Grill, located in California's beautiful Napa Valley. Mustards is owned and operated by chef Cindy Pawlcyn, and for decades has been serving the best kind of new American comfort fare. While I love all the food, the standout dish is their famous Mongolian pork chop.

This is my slightly simplified version, but still very close to what you’d experience at Mustards. She adds a little green onion to the marinade, and I would’ve also, had I not forgotten it at the market. She also puts a touch of cilantro in the mix, but I prefer to use it freshly chopped to garnish the cold mustard sauce (something I should have mentioned in the video, but did add to the ingredient list).

Once marinated, these pork chops can be cooked any way you like, but for the true experience, you’re going to want to cook these on a charcoal grill. For me, it’s the smokiness that brings all these flavors together, but pay special attention to my warnings about direct high-heat.

Once the chops are marked with magazine-quality lines directly over the white-hot coals, I open the grate and push the charcoal away from the center of the grill, so that the meat and flammable marinade isn’t directly over the intense heat. This ensures all that delicious smokiness, with none of that annoying, “Hey, Honey, I think the pork chops are on fire.”

Anyway, if you ever find yourself in Napa Valley, I highly recommend you stop in to Mustards and enjoy this great American treasure. But, if that’s not possible, or you simply can’t wait, then give this a try soon. Enjoy!


Ingredients for 2 Portions:

For the pork and marinade:
two 10-ounce bone-in, extra-thick, center-cut pork chops
1/2 cup hoisin sauce
1 tablespoon grated fresh ginger
4 cloves minced garlic
1 1/2 tablespoon soy sauce
1 tablespoon red wine vinegar
1 tablespoon sherry vinegar
1 tablespoon rice vinegar
2 teaspoons sesame oil
2 teaspoons sugar
1 1/2 teaspoons hot sauce
1/2 teaspoon white pepper
1/2 teaspoon freshly ground black pepper
1 green onion, light parts, minced

For the mustard sauce (this is enough for 4, but I didn't want to use 1/2 a yolk!):
1/4 cup red wine vinegar
2 or 3 tablespoons hot mustard powder, such as Colman's or Chinese style (add to taste!)
3 tbsp sugar (their sauce is on the sweet side, so feel free to add this to taste)
1 egg yolk
1/3 cup creme fraiche or sour cream (click here to see how to make your own)
cayenne, to taste
1 tsp Dijon mustard
1/4 tsp turmeric 
freshly chopped cilantro leaves, optional

Boil-n-Bake Baby Back Ribs – Crime Against Nature, Or Just Guilty of Being Delicious?

Here’s what I know: I took some baby back ribs, simmered them for an hour in a flavorful liquid, glazed them in sauce, roasted them in the oven for about half an hour, and they looked and tasted really good. I also know these boil-n-bake baby back ribs would be great at any party, preferably a Super Bowl party (during which the Giants win the game).

Here’s what I don’t know: Why so many people will lose their minds over the fact that I boiled these ribs. They’ll say it’s a crime against nature, and that these are just not the same as baby backs slowly roasted over smoky coals for hours and hours. Well, duh.

These aren’t meant to replace, or even compete with, a traditionally barbecued version. This is simply a fast and tasty alternative method for having a nice stack of ribs appear on your snack table. Seriously, what’s the problem?

This is one of those recipes where I don’t want or expect you to use the same stuff I did. This is more about the quick and dirty method than any specific ingredients. I would make sure the simmering liquid is very well salted, and have a decent amount of acid and spice, but other than that, anything goes.

As far as the glaze, I just threw a bunch of stuff in a mixing bowl, in a sort of stream of saucy consciousness, but very much enjoyed the results. Chinese 5-spice is wonderful with pork, and created a beautifully aromatic base for the sweet, sour, and spicy sauce.

By the way, if it looks like I was a little short on sauce, I was, but made a little more while they were roasting, and it was fine. The amounts below will give you plenty for a rack of baby back ribs. I hope you give this a try soon. Enjoy!


Ingredients:
1 slab baby back ribs
2 1/2 quarts cold water
1/2 cup rice vinegar
6 cloves crushed garlic
1/2 onion, chopped
2 tbsp kosher salt (less if using fine salt)
1 tbsp Chinese 5-spice
1 tsp red chili flakes
2 bay leaves

For the glaze:
1 1/2 tbsp soy sauce
1 1/2 tbsp rice vinegar
1 1/2 tbsp ketchup
1 1/2 tbsp Dijon mustard
1 1/2 tbsp honey
1 1/2 tbsp brown sugar
2 tsp sambal chili paste, or to taste
1/2 tsp Chinese 5-spice

New Year’s Day Spinach Salad with Hot Bacon Dressing – Good Luck with That!

This spinach salad with black-eyed peas is a twist on one of my favorite American culinary traditions; the custom of serving beans and greens on New Year's Day. Supposedly eating "poor" on New Year’s Day brings much wealth and good luck throughout the year.

The greens, usually braised with ham or sausage, represents paper money, and the beans, usually black-eyed peas, symbolize coins. Here, we’re presenting those ingredients in salad form, which is a great delivery system for our hot bacon dressing– the true star in this video.

If one of your New Year’s resolutions is, “Eat more bacon,” then here’s another delicious way to work it into your diet. This peppery, sweet and tangy sauce is fast to make, and shines on other things besides wealth-generating spinach salads.

Wouldn’t this be great in a warm potato and mushroom salad, as well as a sauce for a grilled chicken breast or pork chop? What about spooned over poached eggs, or slathered on sweet potato fries? Yes, yes, yes, and yes.

If making and eating this salad on January 1st doesn’t really bring you prosperity in 2012, it will certainly bring you some tasty memories, and other pleasures money can’t buy. Happy New Year, and enjoy!


Hot Bacon Dressing Ingredients: (makes about 1 1/3 cup – or 6 servings)
1/2 pound bacon, sliced and cooked in 1/4 cup vegetable oil (reserve bacon pieces and bacon fat drippings)
1/2 cup minced onions
2 cloves minced garlic
1/3 cup apple cider vinegar
1/4 cup rice vinegar
1/2 cup water
1/2 cup sugar, or to taste
1 1/2 tbsp Dijon mustard
1/3 cup of the bacon fat drippings
1 tsp cornstarch dissolved in 2 tsp cold water
salt and pepper to taste
cayenne to taste
For 6 Spinach Salads:
1 pound baby spinach, washed and dried
12 white button mushrooms, thinly sliced
1 cup sliced cherry tomatoes
1 (15-oz) can black-eyed peas, rinsed and drained
